Shopping List - To Serve 4
800g Maris Piper potatoes
2 big fat garlic cloves
75ml whole milk
200ml double cream
2 pinches ground nutmeg
Salt and pepper
A few thyme sprigs
20g parmesan
200g green beans
1 lemon
2 tbsp olive oil
1-4 chicken breasts (1 per person) or 1-4 portobello mushrooms (1 per person)
100 g butter
20g flat leaf parsley
200 ml vegetable or sunflower oil
100g plain flour
2 eggs
200g panko breadcrumbs or other dry breadcrumbs
Equipment
Dish for the dauphinoise - medium size to serve 4, a small saucepan, a sieve, a sharp knife, a chopping board, a fine grater, a mandolin (optional) or a sharp knife, 2 baking trays, tin foil, cling film, a rolling pin or wine bottle, a blender, a frying pan with sides, 3 bowls, measuring spoons, weighing scales, a few small bowls.
